Rhododendron honey is harvested towards the end of September by our partner beekeeper François Biette. The mountain rhododendron only grows at altitude, where the forest gives way to the moor. The apiaries are installed between 1000 and 1400 m altitude. The bees forage the flowers of rhododendrons which are between 1500 and 2500 m. They use updrafts to reach these altitudes.
This shrub can measure up to one meter, its leaves are bright green on top. The flower is pink and sometimes red. Summer flowering is very capricious due to sharp weather changes in high mountains.
A nectar of great finesse
Rhododendron honey has a slow crystallizing creamy texture with fine granulation. Its finesse leads us to consume it with a teaspoon to appreciate the complexity of its aromas.
