The production of Provencal nougats
In a copper cauldron, the honey is heated in a water bath. Three hours of this cooking over a very low heat make it blanch. Whipped egg white gives the nougat its smoothness, while honey stabilizes the whole. The almonds are then toasted before being incorporated into the dough.
